I think most are made in China and just relabeled under some EU brand.
Looking at IKEA smart plug with “Made in China” on it…
As other said IKEA and Shelly devices are solid choices.
Either you’ll stick to one brand and live in their ecosystem or you’ll have 10 apps for controlling various parts of your home. This typically leads to HomeAssistant and Zigbee works great there.
If you want less DIY solution, then Loxone (Austrian or German) or perhaps Jablotron (Czechia). These will cost a lot lot more tho.

If it is just the user part of LLM, then paying $20 for one month subscription would be my recommendation.
You will not be able host anything like Sonnet or Opus.
